Ingredients

  • 1450 g boneless white fish fillets, cut into thick strips
  • 21/2 cup (60 g) flour
  • 32 large eggs, beaten
  • 41 cup (90 g) whole-wheat breadcrumbs
  • 51/2 teaspoon mild paprika, optional
  • 61 tablespoon olive oil

Method

    Heat oven to 220°C/425°F and line a tray.

    Set out flour, beaten egg and breadcrumbs mixed with paprika.

    Coat each fish strip in flour, egg and breadcrumbs.

    Place on tray, brush with oil and bake for 12–15 minutes, turning once, until fish flakes easily and is opaque.

    Check carefully for bones before serving.

Serve with potato wedges, peas and yogurt-lemon dip.
