Ingredients

  • 11 cup grated zucchini (squeezed dry)
  • 2½ cup grated carrot
  • 3¼ cup grated cheddar cheese
  • 41 egg
  • 53 tbsp plain flour (or chickpea flour for gluten-free)
  • 61 tbsp olive oil

How to make it

    Grate zucchini and carrot. Wrap in a clean towel and squeeze out as much liquid as possible.

    In a bowl, combine grated veg, cheese, egg, and flour. Mix well.

    Heat olive oil in a non-stick pan over medium heat.

    Drop heaped tablespoons of mixture into the pan and flatten slightly.

    Cook 3–4 minutes per side until golden and cooked through.

    Drain on paper towel and cool before serving.
