Ingredients

  • 1500 g lean ground turkey
  • 21 small carrot, finely grated
  • 31/2 small zucchini, finely grated and squeezed dry
  • 41 large egg
  • 51/2 cup (45 g) fine breadcrumbs
  • 61 teaspoon dried oregano
  • 71 tablespoon olive oil

Method

    Heat oven to 200°C/400°F and line a tray.

    Mix all ingredients gently until combined; do not overwork.

    Roll into 20 small meatballs and place on the tray.

    Bake for 15–18 minutes, until cooked through with no pink center.

    Cool slightly before serving or packing.

Serve with soft pita, cucumber and yogurt dip, or with pasta and tomato sauce.
