Nutrition note
Hummus provides plant protein, fiber and healthy fat. Whole-wheat pita adds fiber; vegetables add color and crunch.
Ingredients
- 12 whole-wheat pita breads
- 21/2 cup (120 g) hummus
- 31/2 cup (50 g) finely shredded carrot
- 41/2 cup (60 g) cucumber, cut into thin short sticks
- 51/2 cup (40 g) finely shredded lettuce
- 61/4 cup (30 g) grated cheese, optional
Method
- 1
Warm pita briefly if needed to make it flexible. Cut each into two pockets.
- 2
Spread hummus inside each pocket.
- 3
Fill with small amounts of carrot, cucumber, lettuce and cheese.
- 4
Press gently and cut into manageable pieces.
Complete the Meal
Serve with fruit and plain milk or water.
Allergens
Hummus commonly contains sesame; pita contains wheat. Contains dairy if cheese is used.
Ingredient Substitutions
- Use white-bean dip for sesame-free pockets.
- Use gluten-free wraps instead of pita.
- Omit cheese for dairy-free pockets.
Storage & Reheating
Assemble up to 4 hours ahead; keep chilled.
Freezer Guidance
Do not freeze assembled pockets.
Picky-Eater Strategy
Serve as a deconstructed lunchbox with pita, hummus and vegetables in separate compartments.
