Ingredients
- 11 cup red lentils, rinsed
- 21 medium carrot, diced
- 31 small onion, diced
- 41 garlic clove, minced
- 53 cups low-sodium vegetable broth
- 6½ tsp cumin
- 71 tbsp olive oil
How to make it

Heat olive oil in a pot over medium heat. Sauté onion and carrot for 5 minutes.

Add garlic and cumin, cook for 1 minute until fragrant.

Add rinsed lentils and broth. Bring to a boil.

Reduce heat and simmer for 20 minutes until lentils are very soft.

Blend until smooth using a hand blender.

Adjust consistency with extra broth if needed. Serve warm.
